Pimento Cheese
1 lb. sharp cheddar, shredded
8 oz. cream cheese, room temperature
3/4 c. mayonnaise, preferably Best Foods
8 oz. diced pimentos (in the jar)
1/2 to 1 c. thinly sliced green onions
2 t. fresh lemon juice (about 1/2 a lemon)
1 t. finely minced garlic
2 t. Worcestershire sauce, optional
1/4 t. cayenne pepper
1/2 t. freshly ground pepper
Drain pimentos. In a large bowl combine cheddar, cream cheese, mayonnaise, pimentos, and all seasonings. Blend together mashing and stirring with a wooden spoon until smooth and creamy. There should be a little texture from the pimentos and cheddar cheese. Serve with saltines or the cracker of your choice.
