Celery Root and Apple Salad
1/2 celery root, grated (~2.5-3 cups)
2 large Granny Smith apples, grated (same amt)
juice of 5 meyer lemons
Combine and toss.
1/3 cup creme fraiche
2 T mayonnaise
Combine and dress grated mixture.
Mixed greens
1 T champagne vinegar
3 T olive oil
Garnish: microgreens, pomegranate
Dress mixed greens lightly with vinegar and oil. Make a bed of greens, spoon grated mixture over them, and garnish with microgreens and pomegranate seeds.
Serves: 12
