Figs in a Blanket

8 large figs (brown or green), stems removed and cut into quarters, lengthwise
3 oz. Prosciutto, sliced into small pieces (large enough to wrap around the fig)

wood toothpicks

accompaniments (optional): crackers, cheese

Preheat oven to 450F.

Wrap prosciutto around figs and spear through the fig with a toothpick to make a handle for easy pickup. Place an inch apart on a baking sheet sprayed or brushed lightly with oil. Bake for 15 to 20 minutes until the prosciutto is crisp.

Serve with cheese and crackers on the side. For cheese, I especially love drunken goat cheese, creamy goat cheese, Manchego, or Délice de Bourgogne. For crackers, I recommend a multigrain cracker or fig and olive raincoast crisps (really, any flavor is delicious!)
