Pineapple Raspberry Agua Fresca
1/2 cup sugar
1 to 1 1/2 cups cold water
1 ripe pineapple, peeled, cored and sliced
1/2 pint red raspberries
1/4 cup fresh lime juice
Combine the sugar and water in a saucepan and bring to a boil. Place the fruit in a large bowl and poor the sugar-water mixture over it.
Let cool to room temperature. Working in batches, puree the fruit with the sugar-water in a blender. Strain through a fine sieve or chinois. Stir in the lime juice. Refrigerate until serving time. Serve very cold.
