Mixed Green Salad with Pears and Pine Nuts
Mixed greens (I used home grown arugula and mache)
1 Asian pear
1/2 cup pine nuts
Slice pear into long wedges. Toast pine nuts in toaster oven until golden.
1 T champagne vinegar
3 T olive oil
1 T meyer lemon juice
1 t meyer lemon zest
Whisk dressing ingredients together and toss salad.
Serves: 6-8
