Mediterranean Salad with Cucumbers, Tomatoes, and Mint
3 heirloom tomatoes
4 lemon cucumbers
1 head red leaf lettuce
2 T chopped fresh mint leaves
1/4 borage flowers
1 T balsamic vinegar
3 T olive oil
salt and pepper
6 oz feta cheese
Chop tomatoes and cucumbers coarsely, and toss with lettuce. Whisk mint, oil, and vinegar together, season with a little salt and pepper, and dress the salad. Crumble feta cheese on top. Sprinkle with borage flowers.
Note: Make this salad when tomatoes are in season.
Serves: 6
