Corn Bread
1 c corn meal
1 c flour
3 teasp baking powder
1/2 teasp salt
2 tablesp sugar
1 egg beaten
1/4 c oil (I use olive)
1 can corn niblets drained
Preheat oven to 425. Grease well a 8X8X2 pan. Mix all ingredients in a mixing bowl by hand until ingredients combine. Avoid over mixing. Batter may be quite liquid. Pour into baking pan. REDUCE oven temp to 400. Bake 20-25 min or until toothpick pulls out cleanly.
Serves: 6-8
